KAI GOJJU

Some times you feel so lazy to cook a meal and just wish to cuddle up in a blanket and have something piping hot.
"Kai Gojju" or "instant gojju" is a tangy tasting liquid served with hot rice which i am sure helps to rise your taste buds.
As it does not require any cooking time it can be prepared easily and within few minutes.

Ingredients
Water-2 cup
Tamarind-marble sized
salt-as reqd
Finely chopped Onion-1 cup
Finely chopped Tomato-1/4 cup
Red chilli powder or Green chilli -as reqd
Finely chopped Coriander-a handful
















Method
1.Mix everything in a bowl
2.Squeeze with hand so that tomato becomes pulpy and everything mixes well together.
3.Serve with Hot rice.

AVALAKKI/POHA MIXTURE

Darshini or Upahar go to any of the south Indian fast food centres and you can find Hot, red, spicy and slightly sweet tasting rice dish called  "Bisi Bele Bath" topped with crunchy savoury avalakki mixture.
This avalakki or poha mixture can be prepared in a simple and easy way.
Prepare in large quantities and store it in air tight container and you will NEVER run out of snacks.
To prepare this mixture all you need is one hot pan to deep fry, spatula to handle the ingredients and a big bowl to transfer the contents.

Ingredients
Aval/Atukulu/Avalakki/Rice flakes/poha-2 cup
Peanuts-Handful
fried gram-hand ful
curry leaves-few
Dried Red chillies-few
Salt as needed
Red chillie powder as needed
Refined oil for deep frying





Method
1. Heat oil and fry poha, peanuts, fried gram, curry leaves, red chillies separately(one at a time).
2. Take a large bowl and put all the fried ingredients and let it cool for few minutes.
3. Sprinkle salt and chillie powder.
4. Mix everything nicely and serve with the dish you like or as it is as a snack.

CARROT HALWA

Love it or Hate it but u just cant ignore it.
Yes there is such an attraction in the colour of the carrot that you just cant help noticing it.
"CARROT HALWA" is a famous Indian dessert had by every person atleast once.
Every household has there own version of it. But few common ingredients are present in all the versions of carrot halwa.

Aromatic Ghee
Crunchy Nuts and
Sweet Sugar

Here is my version of the sweet delicacy

Ingredient
Grated Carrot:1 Cup
Sugar:1/2-1 cup(adjust accordingly)
Ghee:5-8 TBsp
Cashew and Raisins:4-5 Tbsp
sweetless Khoya or milk powder:4-6 Tbsp
Milk:1/2 cup
 














Method
1.In a pan heat ghee and fry the cashew and raisins untill golden brown, remove them and keep it aside.
2.In the remaining ghee add the carrot and saute untill its cooked.
3.Add milk, khova, sugar and keep stirring until ghee is separated.
4.Turn off the flame and sprinkle elaichi powder, add the fried nuts and mix nicely.
5.Garnish and serve hot or cold.
